Red Velvet Cheesecake

Made this for my best friend birthday today, turned out splendidly. Instead of baking two layers, you can also  made the cake in three thinner layers and used one for the layers for crumbs. Definitely takes a chess like mentality of keeping two steps ahead while you make it though. But it was a big hit and almost everyone that saw it wanted me to make another one for them because is tasty and good looking ! Worth the time and effort, this cake is a win all the way!
