Spinach, Tomato & Goat Cheese Stuffed Spaghetti Squash

Made this last night for dinner and it was awesome! I used sun-dried tomatoes and the oil from that jar instead of olive oil and a diced tomato and it was delicious. You can’t overdo it on goat cheese in this dish!
